If you want a stickier granola, that will more easily clump together, you can up the brown sugar and maple syrup a bit, as I used the bare minimum in this recipe, but I think it's plenty sweet enough, especially if you're a fan of dark chocolate. Tossing chocolate covered raisins, almonds, and cranberries with the warm granola transforms the humble oat mixture into decadent clusters. The almonds make it a little sophisticated, but we wouldn't complain about a handful of chocolate-covered peanuts thrown in the mix.

  1. Get 90 g oats
  2. Take 90 g mixed, unsalted nuts, chopped
  3. Take 40 g cacao nibs
  4. Make ready 20 g cocoa powder

  6. Make ready 2 1/2 tbsp coconut oil, melted
  7. Get Pinch salt

In a medium pot set over low heat, combine the oil with the butter, brown sugar, honey, vanilla, cocoa powder and salt. In a large bowl, combine the oats, wheat germ, cereal and cornmeal. This chocolate granola is inspired by one I tried recently by Purely Elizabeth. I demolished the whole bag in a matter of days and knew I wanted to create a version for the blog.

Instructions to make Chocolate Granola:
  1. Pre-heat the oven to 175°C. - - Mix together the oats, chopped nuts, salt, cacao nibs and cacao powder in a large mixing bowl. Add the honey and coconut oil to the bowl and stir well to coat all of the dry ingredients into the wet.
  2. Spread the granola on a baking tray and bake in the oven for 12-14 minutes, stirring gently every 5 minutes. Keep an eye on the granola towards the end to make sure it doesn’t burn – you want the oats to be nicely toasted.

A simple mix of chocolate chips and chocolate covered raisins is added to the granola after it bakes - to avoid burning any chocolate. While the granola is still warm, add in the chocolate chips and give them a nice stir. The warm granola will melt the chocoalte chips creating large sticky chocolate clusters. On to round number two… I took my favorite crunchy granola recipe, stripped away all of the nuts and dried fruit, and simply added two cups of chocolate chips. This turned out a much better result, seeing as how chocolate chips generally hold their shape when baked, and will remain firm enough when cooled down to be handled.
