  6. Take out two muffin pans (this receipe makes 18 muffins). Line with muffin papers.
  7. Drop the mixture into the papers, not filling them up too much (3/4 of the cup is fine).
  8. Cook at 425°F. for 7-8 minutes. Lower the heat to 350°F. (Do not open the door!) and bake for another 15 minutes. It is ready when a toothpick comes out clean.
  9. Let cool off for 15 minutes in their pans, then take out on a cooling rack and let cool completely before frosting. Enjoy!

I wanted to make them banana nut muffins, but since my daughter doesn't care for nuts I went ahead and added chocolate chips instead. Almost fat free, healthy banana muffins with chocolate chips for a little indulgence. The greek yogurt adds protein and keeps the muffins moist. I used chocolate chunks instead of chocolate chips but either one will do. To make chocolate chunks just chop up slabs up vegan chocolate into chunks.
