Meanwhile, prepare charcoal fire in smoker according to manufacturer's instructions. Like a normal brisket, you can expect the cook time to be fairly extensive. - Pull brisket from smoker and allow to rest for 5 minutes.
- Slice brisket, let it set for 5 minutes and serve.
